The Plan

What's coming.

Lasagna first, because it's what everyone asks for. The rest of the Italian repertoire follows as the kitchen grows — join the waitlist and you'll hear about each one before anyone else.

Start with the lasagna.

Everything else is downstream of getting this one right.

About Sal

Following the food, one tray at a time.

"If I wouldn't put it on my own table, it doesn't go in the freezer."

I'm Sal. I'm not a chef — I'm someone who's chased Italian food his whole life and finally decided to do something about it.

The dream is a proper Italian food company. But the way to get there isn't a big launch, it's a good lasagna, made for the people around me. So that's where this starts: one dish, done properly, for my own community in the Eastern Suburbs. Get that right and the rest can follow.

Lasagna because it's what people actually love. It's the thing that turns a Tuesday into an occasion, gets everyone at the table at the same time, and gives you the best kind of leftovers. It's the dish I keep getting asked to make.

Everything's made by hand in small batches in a commercial kitchen in Sydney's east, then frozen at its peak so you can have that meal on a night you had nothing left in you. Good Italian food, good times around the table — that's the whole idea.

Taste it for yourself.

The proof is in the ragù.
